Fresh Strawberry Vanilla Pancakes

These are so incredibly delicious they shouldn’t even be called pancakes. They deserve a fancy French dessert name that makes it sound like they took 8 hours to make.  Fortunately, you can whip them up in only a few minutes and their vanilla- cinnamon-berry perfection will make even an ordinary Monday taste like a special occasion.  Your kids will love them!

Fresh Strawberry Pancakes

Ingredients
  • 1¼ cups white whole wheat flour
  • 1 Tablespoon cinnamon
  • 1 Tablespoon baking powder
  • ¾ teaspoon salt
  • 1⅓ cups milk
  • 1 egg, lightly beaten
  • ¾ teaspoon vanilla
  • 2 Tablespoons honey
  • 2 Tablespoons melted butter
  • 1 Tablespoon butter for pan
  • 1 cup chopped strawberries, plus more for garnish
  • whipped cream for topping (optional)
  • maple syrup for topping (optional)
Instructions
  1. In a large bowl, combine all dry ingredients.
  2. In a separate bowl whisk together milk, egg, vanilla, honey and melted butter.
  3. Pour wet ingredients into dry ingredients and stir to combine.
  4. Gently fold in chopped strawberries.
  5. Melt butter in pan over medium heat, swirling to coat the pan.
  6. Pour pancakes into hot pan and flip when you start to see bubbles in the batter (about 2-3 minutes per side).
  7. Serve with fresh strawberries, whipped cream and maple syrup.
