I am so excited to share this simple, magical, “un-salad” recipe that has changed my kids into salad eaters (although, weirdly, they do not even realize this is a salad). To be honest, salads have never played a starring role in our family dinners, mostly because even a small amount on the kids’ plates is usually enough to completely freak them out and start an all out eat-your-veggies war – which I’ve learned almost never results in them actually eating their veggies.
BUT, an amazing thing happened when I made this salad the other night – the kids loved it! They all had seconds and Brody actually had THREE servings. I think the magic came from the “un-tossing” of the traditional tossed salad that they’ve been used to. For some reason, when they saw the ingredients all lined up in neat little rows it didn’t even occur to them that it was a salad! In fact, my oldest kept saying “Wow, mom! It’s just like we’re at Subway!” Uhhhhkay Finn, not exactly, but I’m all for playing make believe….
Then, just this morning, the next amazing thing happened – Brody actually asked me if we could have the “rainbow” plate dinner again tonight. You can be sure that my kids have never, NEVER, asked for salad before. This is big! This is a great meal! And, this meal is ALL ORGANIC and only $14.65 total (enough to feed all 6 of us).

- 2 romaine lettuce hearts
- 2 plum tomatoes
- 1 can black beans, drained and rinsed
- 1 avocado
- 1 package Applegate farms organic bacon
- 2 hard-boiled eggs
- 2 carrots
- 1/4 -1/2 cup cubed cheese (I used cheddar)
- Hard boil the eggs: Put two eggs in a pan, fill with enough water to come about an inch above the eggs. Bring to a boil, then cover and simmer for 15 minutes. Immediately transfer the eggs to cold water to cool down.
- Cook the bacon until crisp.
- Chop everything up and arrange in rows on a platter.
