When you’re running late for school and your kids still haven’t eaten here’s a great healthy breakfast on the go! Perfect for picky eaters who are constantly moving.
This is also one of my tips for getting picky eaters to eat: make it fun and just throw the food at them – literally.
In the mornings it often seems that everyone in my house has gone crazy. My boys are usually spinning in four different directions. I’m usually ordering everyone to hurry up, get dressed, get backpacks, get breakfast, etc. –without any results. And there’s usually at least one dog running through the chaos barking like a lunatic.
It’s times like these that I find myself imagining the “other” families. The ones who are enjoying breakfast at the table. The ones politely saying “honey, pass the syrup please”. The ones who say “time to go to school, kids!” and the kids quickly grab their backpacks, give their mom a kiss, and file out the door.
While those other families are enjoying a relaxing start to their days, this is what’s going on in our house.
My kids would rather dance than eat any day. So, a healthy breakfast on the go is not only perfect, but necessary. These egg mini muffins are delicious and they provide a good boost of protein and omegas from the eggs – great for an ADHD diet. And for picky eaters it’s easy to customize them with different fillings. We love filling them with ham and cheese and I sometimes put some spinach in there for added vitamins, but you can add anything your kids like!

I also love that this breakfast on the go can be made ahead of time. You can keep them refrigerated for about 3 days. Just take them out and microwave for :30 seconds. And no flat, fallen eggs here! If you want them to stay puffy just add about half a tablespoon of baking powder when beating the eggs.
Egg Muffin Healthy Breakfast on the Go
An easy make ahead option for breakfast to go. These muffins provide both protein and omegas that are so important in an ADHD diet.
Ingredients
- 4 eggs beaten
- 1/4 cup chopped ham
- 1/4 cup shredded cheese
- 1/2 tsp salt
- 1/2 tbsp baking powder
Instructions

preheat oven to 350 degrees

spray a mini muffin pan with nonstick spray

evenly divide the ham, cheese and any other ingredients you'd like to add between the 12 mini muffin cups

whisk together the eggs, salt and baking powder

pour the whisked egg mixture into the muffin cups filling about 3/4 full
-
bake at 350 for 10 minutes or until set
