Make ahead Berry Breakfast Bake!

Here’s a delicious way to start the morning and set you and your kids up with energy that lasts all day.  It combines super foods like quinoa, chia seeds, nuts and berries and leaves out all of the artificial ingredients found in similar foods like flavored instant oatmeal.  And, one of my favorite things about this dish, it can be made the day before so it’s ready to go in the morning.  Just heat and serve.

I found this recipe in this month’s issue of Good Housekeeping and just altered it a bit.  Enjoy!

Make ahead Berry Breakfast Bake!

  • 2 3/4 cups milk
  • 1/3 cup melted butter
  • 1 Tablespoon vanilla extract
  • 1 cup old fashioned oats
  • 1 cup quinoa
  • 1/2 cup almonds (I used sliced almonds, you can also use whole)
  • 1/2 cup honey
  • 3 Tablespoons chia seeds
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups strawberries (I used frozen berries and cut them in quarters)
  • 1 cup blueberries (I used frozen)
  1. Preheat oven to 375 degrees.
  2. Grease a 2 qt. baking dish.
  3. In a bowl combine milk, butter and vanilla.
  4. In baking dish combine oats, quinoa, almonds, chia seeds, baking powder and salt.
  5. Pour honey over dry ingredients and gently combine.
  6. Pour milk mixture into baking dish.
  7. Top with berries.
  8. Place baking dish on a cookie sheet lined with foil.
  9. Bake for 45 minutes, until most liquid has been absorbed.
  10. Let stand for 5 minutes before serving.
