Egg Muffin Healthy Breakfast on the Go

An easy make ahead option for breakfast to go.  These muffins provide both protein and omegas that are so important in an ADHD diet.

Ingredients

  • 4 eggs beaten
  • 1/4 cup chopped ham
  • 1/4 cup shredded cheese
  • 1/2 tsp salt
  • 1/2 tbsp baking powder

Instructions

  1. preheat oven to 350 degrees

  2. spray a mini muffin pan with nonstick spray

  3. evenly divide the ham, cheese and any other ingredients you'd like to add between the 12 mini muffin cups

  4. whisk together the eggs, salt and baking powder

  5. pour the whisked egg mixture into the muffin cups filling about 3/4 full

  6. bake at 350 for 10 minutes or until set
